Serves 6


200g wholemeal flour
200g soft brown sugar
200g chopped almonds
100g fine oatmeal or porridge oats
100g butter
250ml live yoghurt, preferably soya yoghurt
75g whole linseeds
50g fresh linseed meal
2 eggs
1 tsp vanilla essence
1 tsp baking powder
1/2 tsp sea salt

Soak the whole linseeds in the yoghurt. In a separate bowl, cream the butter, sugar, eggs and vanilla essence. Add the wholemeal flour the linseed meal, the oats, baking powder, sea salt and almonds, then combine with the yoghurt and whole linseed mix. Form in to balls. Place on a lightly greased baking sheet. Leave 5 cm between each ball. Cook in a pre-heated oven at 180C/350F/Gas 4 for 15 mins
