Serves 6


12 x 100g mackerel fillets
200g Portobello mushrooms
4 tbsp soy sauce
2 tbsp cooked black beans
2 tbsp olive oil
2 teaspoons sesame oil
3 garlic gloves, sliced thinly
8 spring onions, shredded, for garnish

Heat the oil in a saucepan. Grill the mackerel fillets for 2 minutes on each side. Meanwhile fry the garlic for 2 minutes. Add the soy sauce, black beans and mushrooms and cook for a further 3 minutes. Put the fish on a serving plate. Spoon the mushroom and black bean mixture over the fish. Garnish with the spring onions and lightly drizzle over the sesame oil.
