A healthy menopause

Mixed seed and honey bars

Serves 6

100g sunflower seeds, lightly toasted

100g sesame seeds, lightly toasted

100g poppy seeds

100g linseeds

500g honey

2 tbsp lemon juice

1 tsp olive oil

Olive oil for greasing

Oil a shallow dish or swiss roll tin and set aside. Add the tsp of olive oil to a large saucepan and make sure that the inside is well coated. Put the lemon juice and honey in to the saucepan, mix well. Without stirring, bring to the boil over a medium heat. Once it is boiling, stir continuously until it reaches 140C/280F (test by dropping a little in to cold water. When ready it should turn in to hard but elastic strands). Take off the heat and stir in the seeds, then quickly pour in to the prepared dish or swiss roll tin. Cool for 10 minutes and then mark out in to about 12 bars, using a wetted knife. When completely cool, cut in to bars.
